Richard Walshe - Director
The Thistle Inn is at the heart of what Rich does. Devoted to its success, its patrons and the Thistle family. Richie is the eternal optimist, exuding positivity wherever he goes. He loves a challenge and is the 'yes man' when it comes to travel and adventure. Both generous and driven, Rich is the kind of boss man we think all boss people should be.
Scott Benton - General Manager
This guy gets (stuff) done. Focussed and driven, Scott leads by example and sets the high standard of food and service that our Thistle guests have come to know and love. A fond foodie and forager, you can also find him scouting for sorrel or onion flowers around his home on the South Coast.
Zane Allmand - Executive Chef
The man whom we trust to deliver glorious food to our tables. Zane is a gentle giant but his food packs a punch! His dishes are considered and seasonal; and his favourite area of the kitchen is the grill. Yes, you're in safe hands when you order meat from our menu. When Zane is not cooking or searching for inspo on the gram, he's spending time with his lovely young family.
Jess Mumby - Conference and Functions Manager
Jess has been a longstanding member of the Thistle since 2016. She left us briefly to go on maternity leave for her adorable son Connor and we are so happy to have her back! She is a Thistle wizz and knows everything there is to know about this place. She will always go above and beyond to ensure you are well looked after.
Bethan
Super laid back and chill Bethan keeps everyone relaxed in a moment of stress, an important asset to any team! Outside of work she has a passion for the gym and doing fun activities with her friends.
Ruba
You will find Ruba with some funky earrings and a cool eye makeup look. She will always be up for a chat, whether that be pouring a pint or at your table. She has a passion for lifeguarding and is excited for summertime to roll around so she can start it back up again!
Morgan
Lovely Morgan will always greet you with a smile and fill up your water glasses enthusiastically as per the photo! When she is not serving you on the floor, she is busy working hard in her first year of Law at Victoria University! To top it all off Morgan is also a black belt, so you may see her on the door as security on some busy evenings ;)
Hamish McCullan
If there's something we could all learn from this man, it is about what it means to work hard and have a strong work ethic. He can usually be found with a duster, mop or glass in hand and is the first onsite day after day. He tells a damn good yarn, so the next time you see him be sure to stop for a chat. Oh how we appreciate his loyalty and commitment to the Inn.
